Hemp seed oil has the lowest amount of saturated fatty acids and the highest amount of the polyunsaturated essential fatty acids of all oils. Flax seed oil comes in second.

Linoleic acid and linolenic acid are precursors to the prostaglandins, a short-lived hormone-like family of substances that regulate many functions in all tissues.
